Enogastronomy

Mozzarella

For centuries the Sele Plateau has been dedicated to the breeding of buffalo – (present there probably since the Longobards) – from whose milk excellent mozzarella is produced.

The curiosity of travellers and tourists and their desire to try this local speciality results in awe and the demand at home to import the product far exceeds the limited quantity available for exportation.

This naturally guarantees the quality of the product which since 1993, has obtained the DOC quality label.

Artichokes

In the Sele Plateau the renowned Paestum Artichoke (IGP) (Geograpically Protected and Identified), is grown. This artichoke is characterised by its large size and its tightly layered small external leaves which are blue-red in colour. It is particularly tender when cooked.

Tomatoes

Renowned in the world is the San Marzano tomato, which flourishes in the Agro-Nocerina-Sarnese Area.

It is a product of excellent quality and has been awarded the DOP label (Denomination of Protected Origin). The quality of the product, its taste, shape and beauty make it unique. Pasta and pizzas flavoured with San Marzano tomatoes or sauce made from this product are the glory of any table.

Olive Oil

The olives which are cultivated on the hills of the Monti Picentini area and on those of the Cilentan area produce oil which has a delightful flavour and when used to dress salads, on ‘bruschetta’ or on meat, its light airy taste is highlighted.

Hazelnuts

‘Typical of Giffoni and denominated ‘tonda’ due to its rounded shape- this is a product which is unequalled in other parts of Italy. It has been awarded the GP label (Geographically protected) too. The ivory-pearl white gruit has a superb taste whether the product is at the height of its maturity or roasted in its shell. Excellent as dried fruit for dessert and in the production of confectionery such as cakes, ‘croccante’, and chocolate etc., it finds pride of place in the preparation of cakes and fresh ice-cream of fines quality.

Cilentan Figs

Not to be forgotten together with the chestnuts from the high areas of Giffoni and from Roccadaspide, are the fresh white figls of cilento, which can also be found wrapped today, dried and filled (with wines that are gradually becoming more and more well-known such as the wines from the Cilento area, from Castel San Lorenzo, from the Amalfi Coast, mention must production meeting a niche demand market, which is obtaining huge success in Montevetrano of San Cipriano Picentino.
